My favorite vegan breakfast is Oatmeal/Banana (or Apple) waffles.
Here's the recipe:
2 cups of water
1 banana or 1 apple
2 cups of rolled oats
1/4 teaspoon of vanilla extract
Mix all ingredients in a blender.
Pour into waffle iron (sprayed with PAM) for 7 minutes. It takes longer because the oatmeal is dense.
Use real Maple Syrup.
It will taste lighter than what you're used to having.
